Vegan Moroccan Pastillas

VEGAN PASTILLAS  

Assembling any Pastill is the same process. The layers of your Pastilla could vary to adjust to your  nutritional preferences and dietary needs

For a vegan Pastilla, you can chose different substitutes for your layers:


  • Substitute tempeh or Tofu for the chicken and following the same recipe except that Tofu an d tempeh both take a lot less time to cook. This process won’t take more than 10-15min  
  • Substitute potatoes for the egg layer   
  • Substitute chicken for rice in the chicken layer    
  • Substitute Garbanzo and rice mix for the chicken layer    
  • Substitute the egg layer with a vegetable layer    

So you can mix the layers as you wish to make a vegetarian or vegan Pastilla. So let’s see we could make the potato and rice/garbanzo layers



Potato layer 

Cut potatoes in very small squares or use hash brown style potatoes

In a cooking pan, mix ½ cup of parsley,  1 tablespoon of ginger, 1 tablespoon of cumin, 1 teaspoon of black pepper, ¼ teaspoon of salt, ¼ teaspoon of clove, 1 teaspoon of turmeric and 1 teaspoon of paprika with 1//4 cup of olive oil and 1 large chopped onion. Mix until the onions are soft, then add the potatoes and cook for another 20 min until the potatoes are done. If you use shredded hash-brown potatoes, this would take less time, about 10-15min



Rice, Garbanzo and raisins  

Make sure the garbanso beans have been socked overnight and cooked for about 3040min
Also, make sure the rice is already cooked. Use whatever type of rice you would like
Now time to prepare the mixture.  In a cooking pan, mix ½ cup of parsley,  1 tablespoon of ginger, 1 tablespoon of cumin, 1 cinnamon stick, 1 teaspoon of black pepper, ¼ teaspoon of salt, 1 teaspoon of turmeric, ¼ teaspoon of clove and 1 teaspoon of paprika with 1//4 cup of olive oil and 1 large chopped onion. Mix until the onions are soft, then add the cooked rice and garbanzo beans and mix well with ½ cup of water. Avoid adding too much water as we want this mix to be dry to layer the Pastilla.


Vegetable layer  

For this layer, you can choose whatever veggies you like. For the consistency however I prefer bell peppers, onions, potatoes, shredded carrots, leeks, spaghetti squash and raisins. You can use all these ingredients or some of them.

The basic spice and herb mix is the same as the rice and garbanzo layer. Start by mixing the onions, parsley and spices with olive oil and cook until the onions are soft. Then added the cut veggies and cook for about 15-20min depending on the veggies of your choice. Once the veggies are almost done, add the raisins and let cook for another 5min. Avoid adding too much water to the mix, add just enough to avoid burning.
